Prepare the spaghetti
Cook the thin spaghetti according to package instructions until al dente. Drain and set aside.

Sauté the shrimp
In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the jumbo shrimp and cook for about 2-3 minutes on each side, until they are pink and opaque.

Add the roasted red peppers
Stir in the diced roasted red peppers and cook for another 2 minutes.

Make the scampi sauce
Pour in the white wine, add red pepper flakes, salt, and black pepper. Bring to a simmer and let cook for about 3-4 minutes until slightly reduced.

Combine with spaghetti
Add the cooked spaghetti to the skillet and toss to combine with the shrimp and sauce. Cook for an additional 2 minutes to heat through.

Garnish and serve
Remove from heat, sprinkle with fresh parsley, and serve immediately.
