Cook the Linguini
In a large pot of salted boiling water, cook the linguini according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and sauté for 3-4 minutes, or until they turn pink and are cooked through. Season with salt and pepper.

Add Spinach and Tomatoes
Stir in the baby spinach and diced tomatoes. Cook for another 2-3 minutes, until the spinach is wilted.

Make the Alfredo Sauce
Pour in the heavy cream and bring to a simmer. Reduce heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper to taste.

Combine and Serve
Add the cooked linguini to the skillet and toss to coat in the sauce. Serve immediately with extra Parmesan cheese if desired.
