    Prepare the Flax Egg

    In a small bowl, mix the flaxseed meal with water and let it sit for 5 minutes to thicken.

    Make the Mixture

    In a large bowl, combine the mashed chickpeas, oats, finely chopped onion, minced garlic, paprika, salt, black pepper, nutritional yeast, and olive oil. Stir well to combine.

    Add Flax Egg

    Add the prepared flax egg to the mixture and mix until fully incorporated.

    Form the Tenders

    Using your hands, form the mixture into tender-shaped pieces. Roll each piece in breadcrumbs to coat.

    Cook the Tenders

    Preheat the oven to 400°F (200°C). Place the tenders on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Buffalo Style (Optional)

    If desired, toss the baked tenders in your choice of wing sauce before serving.

    Serve the plant-based tenders with your choice of dipping sauces, carrots, and celery sticks.
