Plant-Based Tenders

Method

Instructions

  1. 1

    Prepare the Flax Egg

In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes until it thickens.

  2. 2

    Blend the Tenders Mixture

In a food processor, combine the chickpeas, oats, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, black pepper, and the prepared flax egg. Blend until you have a coarse mixture that holds together.

  3. 3

    Shape the Tenders

Take a portion of the mixture and shape it into tender-like shapes. Repeat until all the mixture is shaped.

  4. 4

    Coat the Tenders

Roll each tender in bread crumbs to coat evenly.

  5. 5

    Cook the Tenders

Heat oil in a frying pan over medium heat. Once hot, add the coated tenders and fry until golden brown and crispy, about 4-5 minutes per side.

  6. 6

    Serve

Serve the plant-based tenders with your choice of sauces: BBQ, honey mustard ginger, ranch, raspberry, or vegan ranch. For buffalo style, toss the tenders in your choice of wing sauce and serve with vegan ranch, carrots, and celery.
