Make the Tortilla Chips
Cut the corn tortillas into triangles. Heat the vegetable oil in a large pan over medium-high heat.

Once the oil is hot, fry the tortilla triangles in batches until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

Prepare the Toppings
In a separate bowl, mix the spicy chili or cooked chicken with half of the jack cheddar cheese.

Preheat your oven to 350°F (175°C).

Assemble the Nachos
On a large baking sheet, spread out the crispy tortilla chips. Evenly distribute the chili or chicken mixture over the chips, then sprinkle with the remaining jack cheddar cheese, jalapeños, diced tomatoes, black olives, and chopped onions.

Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and serve immediately with sour cream and salsa on the side.
