Prepare the BBQ Honey Dijon Sauce
In a small bowl, mix together BBQ sauce, Dijon mustard, and honey until well combined. Set aside.

Form the Burgers
Divide the ground beef into two equal portions and shape them into patties, about 1/2-inch thick. Season both sides with salt and black pepper.

Prepare the Brioche Rolls
While the burgers are cooking, slice the brioche rolls in half and toast them on the grill until golden brown.

Assemble the Burger
Spread a generous amount of the BBQ honey dijon sauce on the bottom half of each toasted brioche roll. Place the grilled burger patty with melted cheddar on top, followed by a handful of mixed greens, cole slaw, and thinly sliced red onion. Top with the other half of the brioche roll.
