Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Season the prime rib roast with salt and black pepper. Place it in a roasting pan and cook for about 20 minutes, then reduce the temperature to 325°F (163°C) and roast for an additional 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven, cover with foil, and let rest for 20 minutes before slicing thinly.

Make the Au Jus
In a saucepan over medium heat, combine the beef broth, soy sauce, and any drippings from the roasting pan. Bring to a simmer and let cook for about 10 minutes to meld the flavors.

Assemble the Sandwiches
Layer the sliced prime rib and provolone cheese inside each toasted hoagie roll. Return to the oven for about 5 minutes, or until the cheese is melted.
