Cooking Instructions

  1. 1

    Prepare the Haddock

Preheat the broiler. Place the haddock fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Broil for about 8-10 minutes or until the fish is cooked through and flakes easily with a fork.

  2. 2

    Sauté the Vegetables

In a large skillet, heat the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and cook until they are tender, about 3-4 minutes. Then add the diced tomatoes and fresh spinach, cooking until the spinach is wilted.

  3. 3

    Make the Sauce

Pour in the white wine and lemon juice, stirring to combine. Allow the sauce to simmer for another 2-3 minutes, letting the flavors meld together. Adjust seasoning with salt and pepper.

  4. 4

    Assemble the Dish

Once the haddock is cooked, place the fillets on serving plates. Top each fillet with the sautéed vegetable mixture and finish with a generous sprinkle of crumbled feta cheese.
