Prepare the Steak
Butterfly the NY strip steak carefully, making sure not to cut all the way through. Season both sides with salt and black pepper and set aside.

Cook the Shrimp Filling
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until pink, about 3-4 minutes. Stir in baby spinach and roasted red peppers, cooking until the spinach wilts. Remove from heat and fold in mozzarella cheese until melted. Let the mixture cool slightly.

Make the Demi-Glace
In the same skillet used for the shrimp, melt butter over medium heat. Add diced mushrooms and sauté until golden brown. Pour in Madeira wine and let it reduce by half, then add tomato sauce and simmer for 5-10 minutes. Season with salt and pepper to taste.

Serve
Slice the stuffed steak and drizzle with the Madeira mushroom tomato demi-glace before serving.
