Preparation and Cooking

Make the Pasta Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until the dough comes together and knead for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Cheese Filling
In a mixing bowl, combine the ricotta, mozzarella, parmesan, fontina, gorgonzola, and a pinch of salt. Mix until well combined.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour to prevent sticking.

Fill the Ravioli
Place small spoonfuls of the cheese filling on one sheet of pasta, leaving space between each. Dampen the edges with water, then fold the pasta over to create pockets. Press the edges to seal and cut into squares.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 5-7 minutes until they float to the top. Remove with a slotted spoon.

Serve
Heat the house marinara sauce in a saucepan. Serve the cooked ravioli topped with the marinara sauce.
