    Prepare the Oven and Pans

    Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In a separate bowl, mix the oil and eggs until well combined. Stir in the shredded carrots, crushed pineapple, and chopped pecans.

    Combine Mixtures

    Gradually add the wet mixture to the dry mixture and mix until just combined.

    Bake the Cakes

    Divide the batter evenly among the three prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.

    Prepare Cream Cheese Butter Icing

    In a mixing bowl, beat together 8 oz cream cheese, 1/2 cup unsalted butter, 4 cups powdered sugar, and 1 tsp vanilla extract until smooth and creamy.

    Assemble the Cake

    Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of icing on top, then repeat with the second layer. Top with the third layer and frost the top and sides of the cake.

    Garnish

    Garnish the top of the cake with additional chopped pecans.
