Fried Calamari
Method
Instructions
- 1
Prepare the Calamari
In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and paprika. Add calamari rings to the mixture and let marinate for at least 30 minutes.
- 2
Prepare the Breading
In a separate bowl, mix together the all-purpose flour and cornstarch. This will be the coating for the calamari.
- 3
Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 375°F (190°C).
- 4
Bread the Calamari
Remove the calamari from the buttermilk mixture, allowing excess to drip off. Dredge the calamari in the flour and cornstarch mixture, ensuring they are well coated.
- 5
Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches, without overcrowding the pot. Fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
- 6
Serve
Serve the fried calamari hot with marinara sauce on the side. If desired, offer fra diavlo sauce for an additional charge.
