    Prepare the Garlic Oil

    In a small bowl, mix the minced garlic with olive oil. Set aside.

    Grill the Mushrooms

    Heat a grill pan over medium heat. Brush the sliced portobello mushrooms with olive oil and season with salt and pepper. Grill for about 4-5 minutes on each side until tender.

    Assemble the Panini

    Layer the grilled mushrooms, roasted red peppers, red onion, fresh spinach, and provolone cheese on one slice of Italian bread. Drizzle with balsamic reduction and top with another slice of bread.

    Grill the Panini

    Spread the garlic oil on the outside of the assembled sandwich. Place the sandwich on the grill pan and press down with a panini press or spatula. Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Remove the panini from the grill and let it cool for a minute. Cut in half and serve warm.
