Prepare the Vegetables
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions, green bell peppers, and portobello mushrooms. Season with salt and black pepper. Sauté until the vegetables are tender and the mushrooms are golden brown, about 8-10 minutes. Remove from heat and set aside.

Toast the Hoagie Rolls
In a small bowl, mix the remaining butter with minced garlic. Spread the garlic butter mixture on the hoagie rolls. Place them under a broiler or in a toaster oven until they are golden and crispy, about 2-3 minutes.

Assemble the Sandwiches
Layer the thinly sliced prime rib on the bottom half of each toasted hoagie roll. Top with the sautéed vegetables and sprinkle the shredded aged cheddar cheese over the top.

Melt the Cheese
Place the assembled sandwiches back under the broiler for 2-3 minutes, or until the cheddar cheese is melted and bubbly.

Serve with Tiger Sauce
Remove the sandwiches from the oven and drizzle with tiger sauce before placing the top half of the hoagie rolls on. Serve immediately.
