    Prepare the Eggplant

    Slice the eggplant into 1/2-inch thick rounds. Sprinkle with salt and let it sit for 20 minutes to draw out moisture. Rinse and pat dry.

    Bread the Chicken

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Season the chicken cutlets with salt and pepper. Dredge each cutlet in flour, dip in the egg, and then coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the breaded chicken cutlets and cook for about 3-4 minutes on each side until golden brown. Remove and set aside.

    Cook the Eggplant

    In the same skillet, add the remaining tablespoon of olive oil and sauté the eggplant slices until golden and tender, about 3-5 minutes per side.

    Assemble the Dish

    Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce, then place the fried chicken cutlets on top. Add the sautéed eggplant slices and cover with remaining marinara sauce. Sprinkle mozzarella cheese and fresh basil on top.

    Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
