    Prepare the Filet Mignon

    Season the filet mignon with Cajun spice, salt, and black pepper. Let it sit for about 15 minutes to absorb the flavors.

    Cook the Filet Mignon

    In a skillet over medium-high heat, sear the filet mignon for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from skillet and let rest.

    Make the Gorgonzola Bacon Sherry Cream Sauce

    In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon and set aside. Add sherry wine to the skillet, scraping the bottom to deglaze, and let it reduce by half.

    Finish the Sauce

    Lower the heat, add heavy cream and gorgonzola cheese to the skillet, stirring until the cheese has melted and the sauce is smooth. Stir in the crispy bacon.

    Slice the filet mignon and place it on a plate. Generously pour the gorgonzola bacon sherry cream sauce over the filet. Garnish with sliced scallions and crispy onion straws. Serve immediately.
