Prepare the Chipotle Aioli
In a bowl, combine mayonnaise, chipotle peppers, lime juice, garlic powder, and salt. Mix well and refrigerate until ready to use.

Cook the Bacon
In a skillet over medium heat, cook the applewood-smoked bacon until crispy. Remove and place on paper towels to drain.

Prepare the Jalapeños
Slice the jalapeños and fry them in the same skillet until crispy. Remove and set aside.

Melt the Cheese
During the last minute of grilling, place a slice of aged cheddar cheese on each burger to melt.

Assemble the Burgers
On the bottom half of each toasted brioche roll, place the burger patty with melted cheese. Top with crispy bacon, fried jalapeños, and onion straws. Spread chipotle aioli on the top half of the roll and place it on the burger.
