Prepare the Steak
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Pat the steaks dry with paper towels.

Season
Rub both sides of the filet mignon with olive oil, then season generously with salt and black pepper.

Heat the Pan
Heat a heavy skillet (preferably cast iron) over medium-high heat until hot.

Sear the Steaks
Add the filet mignon to the hot skillet. Sear for about 4-5 minutes on one side until a golden brown crust forms.

Check Temperature
Use a meat thermometer to check for doneness. The internal temperature for medium-rare should be around 130°F (54°C).

Rest the Steaks
Remove the steaks from the skillet and let them rest for about 5 minutes before serving.
