Prepare the Chicken
Preheat the oven to 400°F (200°C). Season the chicken thighs with salt and black pepper.

Roast the Potatoes
In a large bowl, toss the diced potatoes with olive oil, minced garlic, and half of the chopped tarragon. Spread the potatoes on a baking sheet.

Make the Sauce
While the chicken and potatoes are roasting, heat a skillet over medium heat. Add chopped onion and sauté until translucent. Pour in the white wine and cognac, scraping the bottom of the skillet to deglaze. Let it reduce for about 5 minutes.

Finish the Sauce
Stir in the heavy cream and the remaining tarragon. Allow the sauce to simmer for another 5 minutes until slightly thickened.
