Halibut with Comté Crust

Prepare the Crust
In a bowl, mix the grated Comté cheese, sourdough breadcrumbs, chopped walnuts, and a tablespoon of olive oil. Season with salt and pepper.

Cook the Halibut
Preheat your oven to 375°F (190°C). Season the halibut fillets with salt and pepper. In an oven-safe pan, sear the fillets in the remaining tablespoon of olive oil for 2-3 minutes on each side until golden.

Add the Crust
Remove the pan from heat and top each halibut fillet with the prepared Comté crust mixture.

Bake
Transfer the pan to the preheated oven and bake for 10-12 minutes, or until the fish is cooked through and the crust is golden.

Final Assembly
Serve the halibut on a plate with blistered cherry tomatoes on the side, sautéed zucchini and zephyr squash, and a dollop of anchoïade.
