Preheat your oven to 250°C (482°F) or as high as it can go.

Prepare the Onion
Slice the onion thinly. Set aside.

Cook the Lardon
In a skillet over medium heat, cook the lardon until crispy. Remove and drain on paper towels.

Roll Out the Dough
On a lightly floured surface, roll out the pizza dough into a thin rectangular shape.

Spread Crème Fraîche
Spread the crème fraîche evenly over the rolled-out dough, leaving a small border around the edges.

Evenly distribute the cooked lardon and sliced onions over the crème fraîche. Sprinkle with grated Gruyère cheese, salt, and black pepper.

Transfer the tarte flambée to a baking sheet or pizza stone. Bake in the preheated oven for about 10-15 minutes, or until the edges are golden and crispy.

Remove from the oven, garnish with fresh parsley, slice, and serve hot.
