Prepare the Celery
Chop the celery into small pieces and toss in melted butter with a pinch of salt and pepper. Set aside.

Prepare the Chicken
Dip the chicken thighs into the chili oil, ensuring they are well coated. Season with salt and pepper. Heat a skillet over medium-high heat and cook the chicken thighs for about 5-7 minutes on each side, until crispy and cooked through. Remove from heat and let rest for a few minutes.

Assemble the Sandwich
Slice the brioche buns in half. Spread a generous amount of roasted garlic honey on the bottom half of each bun. Place the crispy chicken thigh on top, followed by the buttered celery. Top with the other half of the bun.

Serve the spicy chicken sandwich warm, optionally with extra chili oil on the side.
