Method

  1. 1

In a large bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat together butter, granulated sugar, brown sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Gradually add the dry ingredients to the wet ingredients and mix until combined. Fold in chocolate chips.

  2. 2

Preheat the oven to 350°F (175°C). Scoop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Ice Cream Preparation

  1. 3

    Make Ice Cream Filling

In a large bowl, whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk, vanilla extract, and crushed Oreo cookies until well combined.

  2. 4

    Freeze Ice Cream

Transfer the ice cream mixture to a container and freeze for at least 4 hours or until firm.

Assembly

  1. 5

    Assemble Sandwiches

Once the cookies are completely cooled and the ice cream is firm, take one cookie, add a generous scoop of the Oreo ice cream filling, and top with another cookie. Press gently to adhere. Repeat until all cookies are used.

  2. 6

    Freeze Sandwiches

Place the assembled ice cream sandwiches back in the freezer for at least 1 hour before serving.
