    Prepare the Base

    In a medium saucepan, combine whole milk, heavy cream, sugar, honey, salt, and vanilla extract over medium heat. Stir until sugar is dissolved and mixture is warm, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks. Gradually add a small amount of the warm milk mixture into the yolks to temper them, whisking constantly.

    Combine Mixtures

    Once tempered, pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Bourbon

    Remove from heat and stir in the bourbon. Allow the mixture to cool to room temperature, then refrigerate until completely chilled (at least 4 hours).

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to an airtight container and freeze for at least 4 hours until firm.
