Caramelize the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and a pinch of salt. Cook slowly for about 15-20 minutes until they are golden brown, stirring occasionally. Remove from heat and set aside.

Prepare the Special Sauce
In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, garlic powder, salt, and pepper. Adjust seasoning to taste.

Form and Cook the Patties
Divide the ground beef into 4 equal parts and form into patties. Season with salt and pepper. In the same skillet, heat 1 tablespoon of butter over medium-high heat. Once hot, add the patties and cook for about 2-3 minutes on each side until well browned and cooked through. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Assemble the Patty Melt
Spread the special sauce on one side of each slice of sourdough bread. Add a cooked patty with melted cheese, followed by caramelized onions. Top with another slice of bread, sauce side down.

Serve
Remove from skillet, cut in half, and serve hot with your favorite sides.
