Burger Preparation

    Prepare the Bacon Jam

    Cook the bacon in a skillet over medium heat until crispy. Remove and chop the bacon. In the same skillet, add diced onions and cook until soft. Combine the bacon and onions with brown sugar, balsamic vinegar, and a pinch of pepper. Simmer until thickened, about 10-15 minutes.

    Form the Patties

    Divide the ground beef into two equal portions and gently form into patties. Make them slightly larger than the buns as they will shrink while cooking.

    Cook the Patties

    Heat a skillet or griddle over medium-high heat. Add the patties and smash them down with a spatula. Cook for about 3-4 minutes until a crust forms, then flip, add a slice of cheese to each patty, and cook for an additional 1-2 minutes until the cheese melts.

    Assemble the Burger

    Toast the brioche buns. Spread aioli on the bottom bun, place the arugula, followed by the patties. Top with a generous amount of bacon jam, shaved red onion, and finish with the top bun.
