Preparation

    Mashing the Barley

    In a large pot, combine the malted barley with 4 cups of water. Heat the mixture to about 150°F (65°C) and maintain this temperature for 60 minutes. Stir occasionally.

    Straining the Mash

    After 60 minutes, strain the mixture through a fine mesh strainer or cheesecloth into another pot, discarding the solid barley grains.

Boiling

    Boiling the Wort

    Bring the strained liquid (now called wort) to a boil over medium heat. Once boiling, add the hops and boil for 15-20 minutes.

    Adding Honey and Vanilla

    In the last 5 minutes of the boil, add the honey and vanilla extract to the wort, stirring to combine.

Cooling and Fermentation

    Cooling the Wort

    Remove the pot from heat and cool the wort quickly using an immersion chiller or by placing the pot in an ice bath until it reaches room temperature.

    Fermenting

    Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel. Allow it to ferment in a cool, dark place for about 1-2 weeks.

Bottling

    Bottling the Brew

    After fermentation is complete, bottle the malt using sanitized bottles and caps. Leave a small amount of headspace.

    Carbonation

    Let the bottled malt carbonate at room temperature for about 1-2 weeks before refrigerating.
