Poke Base

Cilantro Lime Aioli

Method

Poke Preparation

  1. 1

    Prepare the Ahi Tuna

Dice the ahi tuna into small cubes, approximately 1/2 inch in size.

  2. 2

    Mix with Poke Sauce

In a mixing bowl, combine the diced ahi tuna with poke sauce. Allow it to marinate for about 10 minutes to absorb the flavors.

  3. 3

    Combine with Wakame Salad

After marinating, gently fold in the wakame salad to the poke mixture.

Cilantro Lime Aioli Preparation

  1. 4

    Make the Aioli

In a bowl, combine mayonnaise, finely chopped fresh cilantro, and lime juice. Mix well until smooth and creamy.

Assembly

  1. 5

    Layer the Chips

On a large serving platter, spread out the pololo (tortilla chips) evenly.

  2. 6

    Add the Poke Mixture

Spoon the poke mixture with wakame salad over the chips, ensuring even distribution.

  3. 7

    Top with Aioli

Drizzle the cilantro lime aioli generously over the poke and chips.

  4. 8

    Add Remaining Toppings

Finish with unagi glaze, pickled red onion, pickled jalapeño, and a sprinkle of sesame seeds.
