Preparation of Mash

    In a large mixing vessel, combine 60 cups of corn mash, 30 cups of rye mash, and 10 cups of barley mash. Stir well to ensure an even mixture.

    Slowly add 20 liters of warm water to the grain mixture, stirring continuously until the mash reaches a consistent texture.

    Cool the Mash

    Allow the mash to cool to room temperature, which is essential before fermentation.

Fermentation

    Transfer to Fermentation Vessel

    Once cooled, transfer the mash into a fermentation vessel.

    Add Yeast

    Sprinkle 2 tablespoons of yeast over the mash in the fermentation vessel. Stir gently to incorporate.

    Cover the fermentation vessel and let it sit for about 5-7 days at a controlled temperature, stirring daily, until bubbling ceases.

Distillation
