House Spice Blend Preparation

    Mix the Spices

    In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well and set aside.

Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps achieve crispy fries.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove moisture.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the potatoes in batches until they are golden brown and crispy, about 5-7 minutes.

    Season the Fries

    Once fried, remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle the house spice blend generously over the fries.

Ghost Pepper Aioli Preparation

    Mix the Aioli

    In a bowl, combine mayonnaise, ghost pepper sauce, lemon juice, minced garlic, and salt. Stir until well mixed and creamy.
