Tofu Preparation

Prepare Tofu
Drain the tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.

Coat Tofu
In a bowl, toss the tofu cubes with cornstarch and salt until evenly coated.

Bread Tofu
Dip each piece of coated tofu into panko breadcrumbs, ensuring each piece is fully coated.

Fry Tofu
In a large pan, heat vegetable oil over medium heat. Once hot, add the breaded tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.

Add Seasoning
Stir in chopped scallions and soy sauce, and drizzle with sesame oil. Cook for an additional 2 minutes.
Miso Vinaigrette

Mix Vinaigrette
In a small bowl, whisk together white miso paste, rice vinegar, sesame oil, honey (or maple syrup), water, and peanut butter until smooth and combined.
Assembly

Combine Ingredients
In a large serving bowl, combine the crispy tofu and stir-fried vegetables. Drizzle with the miso vinaigrette and toss well to coat.

Serve warm, garnished with additional scallions if desired.
