Method

Fries Preparation

    Cut Potatoes

    Wash and peel the Russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak Potatoes

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Fries

    After soaking, drain the fries and pat them dry with a clean towel.

    Heat Oil

    In a large pot, heat the vegetable oil to 350°F (175°C) over medium heat.

    Fry Potatoes

    Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.

    Season Fries

    While still hot, sprinkle the fries with salt and toss to coat.

Garlic Oil Preparation

    Prepare Garlic Oil

    In a small saucepan, combine the garlic cloves and olive oil. Heat over low heat for about 10 minutes, allowing the garlic to infuse the oil without burning.

    Strain Garlic

    After infusing, strain the garlic from the oil and set aside the garlic oil for drizzling over the fries.

Parsley Preparation

    Chop Parsley

    Finely chop the fresh parsley and set aside for garnish.

Roasted Garlic Aioli Preparation

    Roast Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off the remaining garlic cloves and wrap them in foil. Roast for 30-35 minutes until soft.

    Make Aioli

    In a bowl, combine the mayonnaise, roasted garlic, lemon juice, salt, and black pepper. Mash the roasted garlic into the mayonnaise until well incorporated.

    Chill Aioli

    Refrigerate the aioli for at least 30 minutes before serving.
