Method
Cochinita Pork

Prepare the Marinade
In a bowl, mix the orange juice, lime juice, minced garlic, oregano, cumin, salt, and black pepper to create a marinade.

Marinate the Pork
Place the pork shoulder in a large zip-top bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, preferably overnight.

Cook the Pork
Preheat your oven to 300°F (150°C). In a large Dutch oven, heat the cooking oil over medium-high heat. Sear the marinated pork on all sides until browned. Add bay leaves and cover with a lid. Cook in the oven for 4-5 hours or until the pork is tender and easily shreds.

Shred the Pork
Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the meat using two forks and mix it with the juices in the Dutch oven.

Mix the Aioli
In a bowl, combine the mayonnaise, chopped cilantro, lime juice, and minced garlic. Mix well until all ingredients are fully incorporated. Chill in the refrigerator until ready to serve.
Assemble the Sandwich

Prepare the Rolls
Slice the bolillo rolls in half. Toast them lightly, if desired.
