Prepare the Marinade
In a blender, combine achiote paste, orange juice, lime juice, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.

Marinate the Pork
Place the pork shoulder in a large bowl and pour the marinade over it. Cover and refrigerate for at least 4 hours, preferably overnight.

Shred the Pork
Remove the pork from the oven, let it cool slightly, and then shred it using two forks.

Pickle the Jalapeños
Slice the jalapeños into rings and place them in a jar. Pour the hot pickling brine over the jalapeños, ensuring they are fully submerged. Let them cool, then refrigerate for at least 1 hour.
Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the butter over low heat. Keep it warm but not boiling.

Whisk the Egg Yolks
In a heatproof bowl, whisk together egg yolks and lemon juice until pale and creamy.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes until the whites are set and yolks are still runny.

Split the English muffins and toast them until golden brown.

Serve immediately with a side of breakfast potatoes or a field greens salad.
