In a large mixing bowl, combine the flour and salt. Create a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms.

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

In a mixing bowl, combine the ricotta cheese, cooked spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
