    Make the Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms.

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    In a mixing bowl, combine the ricotta cheese, cooked spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assembly and Sauce

    After the dough has rested, divide it into quarters. Roll out one piece at a time on a floured surface until very thin (about 1/16 inch thick).
