Burger Patty Preparation

    Season the Beef

    In a bowl, combine the ground Wagyu beef with salt and black pepper. Mix gently to avoid overworking the meat.

    Form Patties

    Divide the seasoned beef into two equal portions and shape them into patties, making a slight indentation in the center of each patty to prevent puffing during cooking.

Shallot Aioli Preparation

    Combine Ingredients

    In a mixing bowl, add minced shallots, mayonnaise, minced garlic, and lemon juice. Stir well to combine.

    Season the Aioli

    Add salt and black pepper to taste, adjusting as necessary. Mix until smooth and set aside.

Cooking Burgers

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side, then flip them over.

    Add Cheese

    After flipping, place a slice of cheese on each patty and cook for an additional 3-4 minutes, or until the cheese is melted and the burgers are cooked to your desired doneness.

Assembling the Cheeseburger

    Toast the Buns

    While the burgers are cooking, split the brioche buns and toast them lightly on the grill or in a toaster.

    Build the Burger

    Spread a generous amount of shallot aioli on the bottom bun, add the burger patty with melted cheese, then layer with lettuce and tomato slices. Top with the other half of the brioche bun.
