Green Beans

    Prepare the Green Beans

    Trim the ends of the French green beans and rinse them under cold water.

    Blanch the Beans

    Bring a pot of salted water to a boil. Add the green beans and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into ice water to stop the cooking process.

    Char the Beans

    Heat olive oil in a grill pan over high heat. Drain the green beans from the ice water and pat dry. Add them to the pan and char for about 4-5 minutes, turning frequently. Season with salt and black pepper.

Sea Bream Aioli

    Cook the Sea Bream

    Season the sea bream fillet with salt and pepper. Heat a skillet over medium-high heat and cook the fish for about 4-5 minutes on each side until golden and cooked through. Let cool.

    Make the Aioli

    In a blender, combine the cooked sea bream, garlic, egg yolk, and lemon juice. Blend until smooth. While blending, slowly drizzle in vegetable oil until emulsified and creamy. Season with salt to taste.

Kurobuta Pork Belly

    Prepare the Pork Belly

    Cut the Kurobuta pork belly into thick slices. In a bowl, mix soy sauce, brown sugar, and mirin. Marinate the pork belly in this mixture for at least 30 minutes.

    Cook the Pork Belly

    In a skillet over medium heat, cook the marinated pork belly slices until crispy and caramelized on both sides, about 5-6 minutes per side. Remove and let rest before slicing.

Garnish

    Plate the Dish

    On a serving platter, arrange the charred green beans. Slice the Kurobuta pork belly and place it on top of the beans. Drizzle with sea bream aioli, and sprinkle bonito flakes and sesame seeds over the top for garnish.
