Mashing

Prepare the Mash
In a large mash tun, combine the 10 kg of malted barley with 40 liters of hot water. The temperature should be around 65°C (149°F). Stir the mixture well to ensure all the barley is saturated.

Let it Rest
Allow the mash to rest for about 60 minutes. This will enable the enzymes in the malted barley to convert the starches into fermentable sugars.
Sparging

Sparge the Mash
After resting, sparge the mash with an additional 20 liters of hot water at approximately 75°C (167°F) to wash out the sugars from the grains. Collect the liquid, known as wort, in a separate vessel.
Fermentation

Cool the Wort
Cool the collected wort to around 20°C (68°F) using a heat exchanger or by placing it in an ice bath.

Add Yeast
Once cooled, transfer the wort to a fermentation vessel and add 20g of distiller's yeast. Stir gently to mix well.

Ferment
Seal the fermentation vessel with an airlock and allow it to ferment for approximately 5 to 7 days, or until bubbling has significantly slowed down.
Distillation

Distill the Wash
Transfer the fermented wash to a pot still. Heat gradually to initiate distillation, collecting the distillate in separate fractions.

Collect the Heart
Focus on collecting the 'heart' fraction of the distillate, which is the desirable spirit.
Aging

Fill Oak Barrels
Once distilled, fill two oak barrels with the collected spirit. Seal them tightly.

Age the Whiskey
Store the barrels in a cool, dark place for a minimum of 3 years to allow the whiskey to develop its flavors.
