Prepare Breakfast Potatoes

Cook Potatoes
Dice the potatoes into 1/2-inch cubes. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, salt, black pepper, and paprika. Stir to coat the potatoes with the oil and spices.

Sauté Potatoes
Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside. Remove from heat and set aside.

Add Brisket and Peppers
Stir in the smoked brisket (chopped into bite-sized pieces) and diced roasted red pepper. Cook until heated through, about 5 minutes.
Fry Eggs and Assemble

Toast Bread
While the eggs are frying, toast the slices of bread until golden brown.

Assemble the Dish
On a plate, layer the crispy breakfast potatoes, then top with the brisket and vegetable mixture. Place a fried egg on top, sprinkle with pickled red onions and feta cheese. Serve with toast on the side.
