Prepare the Plantains
Peel the green plantains by cutting off the ends and slicing the skin lengthwise. Remove the skin and cut the plantains into 1-inch thick slices.

Fry the Plantains
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the plantain slices and fry for about 3-4 minutes on each side, or until they turn a light golden color.

Smash the Plantains
Remove the fried plantains from the oil and place them on a paper towel to drain excess oil. Using the bottom of a flat dish or a tostonera (plantain press), gently flatten each slice to about ½ inch thick.

Fry Again
Return the smashed plantains to the hot oil and fry for an additional 2-3 minutes, until they are crispy and golden brown. Remove from the oil and place on a paper towel to drain. Sprinkle with salt to taste.

Prepare the Garlic Sauce
In a small bowl, finely mince the garlic cloves. Combine minced garlic, mayonnaise, lemon juice, and salt in a mixing bowl and stir until well combined.
