Marinade

Method

Marinating

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine the orange juice, lime juice, minced garlic, olive oil, ground cumin, dried oregano, salt, and black pepper. Mix well.

  2. 2

    Marinate the Flank Steak

Place the flank steak into the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 4

    Grill the Steak

Remove the flank steak from the marinade and shake off any excess. Grill the steak for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy.

  3. 5

    Rest the Steak

Once cooked, remove the steak from the grill and let it rest for 5-10 minutes. This will help retain the juices.

Serving Preparation

  1. 6

    Sauté the Onions

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and sauté until they are soft and caramelized, about 8-10 minutes.

  2. 7

    Slice and Serve

Slice the rested flank steak against the grain into thin strips. Serve the sliced steak topped with sautéed onions, chopped cilantro, and lime wedges on the side.
