Marinade Preparation

Prepare the Chiles
Remove the stems and seeds from the guajillo and ancho chiles. Place them in a bowl and cover with warm water to soften for about 15 minutes.

Blend Marinade
In a blender, combine the softened chiles, garlic cloves, white vinegar, orange juice, ground cumin, oregano, salt, black pepper, and brown sugar. Blend until smooth.

Preheat the Grill
Preheat your grill to medium-high heat.

Cook the Pork
Remove the pork from the marinade and let excess marinade drip off. Grill the pork for about 15-20 minutes per side, or until fully cooked and slightly charred. The internal temperature should reach 145°F (63°C).

Rest the Pork
Remove the pork from the grill and let it rest for 10 minutes before slicing.

Prepare the Pineapple
While the pork is resting, grill the pineapple slices for about 3-4 minutes on each side until caramelized.

Slice the Pork
Slice the rested pork thinly, against the grain.

Assemble Tacos
Warm the corn tortillas on the grill or in a skillet. Serve the sliced pork on the tortillas topped with grilled pineapple, chopped cilantro, and diced onion. Serve lime wedges on the side.
