Preparing the Potatoes

    Peel and Cut

    Peel the russet potatoes and cut them into 1-inch cubes.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes. This helps to remove excess starch and makes them crispier.

    Dry the Potatoes

    Drain the potatoes and pat them dry with a clean kitchen towel.

    Fry the Potatoes

    In a large skillet or deep fryer, heat olive oil over medium-high heat. Once hot, add the potatoes in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt and black pepper to taste.

Making the Spicy Tomato Sauce

    Sauté Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomato Puree

    Stir in the tomato puree, smoked paprika, red chili flakes, salt, and sugar. Mix well to combine.

    Simmer Sauce

    Add water to the saucepan and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
