Preparing the Marinade

Prepare the Marinade
In a bowl, combine minced garlic, soy sauce, orange juice, bay leaves, black peppercorns, cumin, oregano, and salt. Mix well.

Marinate the Pork
Place the pork shoulder in a large resealable bag or dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
Roasting the Pork

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare for Roasting
Remove the pork from the marinade and let it come to room temperature. Reserve the marinade for basting.

Rest the Pork
Once done, remove the pork from the oven and let it rest for at least 20 minutes before carving.
Cooking the Rice

Prepare the Rice
In a medium saucepan, combine 2 cups of long-grain rice, 4 cups of water, and 1 tsp of salt. Bring to a boil.

Cook the Rice
Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
