Caramel Preparation

Make the Caramel
In a medium saucepan, combine the granulated sugar and water over medium heat. Stir gently until the sugar dissolves.

Cook the Caramel
Increase the heat to medium-high and bring the mixture to a boil without stirring. Allow it to cook until it turns a deep amber color, about 8-10 minutes. Watch closely to avoid burning.

Pour the Caramel
Once the caramel is ready, immediately pour it into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.

Pour into Mold
Carefully pour the custard mixture over the set caramel in the mold or ramekins.

Prepare for Baking
Preheat your oven to 350°F (175°C). Place the flan mold inside a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the flan mold, creating a water bath.

Bake the Flan
Bake in the preheated oven for 50-60 minutes, or until the custard is set and a knife inserted comes out clean.

Cool and Chill
Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight for best results.

Serve
To serve, run a knife around the edges of the flan to loosen it. Invert onto a serving plate and let the caramel sauce drizzle over the top.
