Preparing the Beef Steak

    Marinate the Steak

    In a small bowl, combine the olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the beef loin steaks. Allow the steaks to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for better flavor.

    Preheat the Grill

    Preheat your grill to high heat (about 450°F/232°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Steak

    Place the marinated steaks on the hot grill. Grill for about 4-5 minutes on one side, then flip and grill for another 3-4 minutes for medium-rare, or until your desired doneness is reached.

    Rest the Steak

    Remove the steaks from the grill and allow them to rest for about 5 minutes before slicing. This helps maintain their juices.

Making the Chimichurri Sauce

    Chop the Herbs

    Finely chop the fresh parsley and oregano. You can also use a food processor for a more uniform texture.

    Prepare the Sauce

    In a bowl, combine the chopped herbs, minced garlic (finely chop or use a garlic press), red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well until all ingredients are combined.

    Let it Rest

    Let the chimichurri sauce sit for at least 15 minutes for the flavors to meld together. You can store it in the refrigerator for up to a week.

Serving

    Plate the Dish

    Slice the rested steak against the grain and arrange it on a serving platter. Drizzle the chimichurri sauce generously over the sliced steak. Serve immediately with additional chimichurri on the side, if desired.
