Cook the Chorizo
In the same skillet, add the chorizo sausages and cook until browned and heated through, about 5 minutes. Remove and set aside.

Prepare the Pork Belly
In the same skillet, fry the pork belly until crispy, about 5-7 minutes. Remove and set aside.

Brown the Ground Beef
In the same skillet, add the ground beef and cook until browned, breaking it up into small pieces, about 5-7 minutes. Season with salt to taste.

Soak the Beans
Soak the red beans overnight in water. Drain and rinse before cooking.

Cook the Rice
In a separate pot, add 1 cup of rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Toppings and Assembly

Prepare the Plantains
Slice the plantains and fry in a skillet until golden brown and crispy, about 3-4 minutes per side.

Assemble the Bandeja Paisa
On a large platter, arrange the cooked ground beef, chorizo, chicken thighs, crispy pork belly, rice, and beans. Garnish with sliced avocado, fried plantains, chopped cilantro, and lime wedges.
