Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another 1 minute.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, place a generous amount of the brisket mixture in the center, and roll it up. Place the rolled tortilla seam-side down in a baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour the green chili sauce evenly over the enchiladas. Sprinkle shredded cheddar cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
