Measure beans
Measure 1/4 cup (about 40–45 g) whole coffee beans for a single 12-oz cup. If you prefer a slightly stronger cup, add the optional 1 tbsp (0.05 cup) dark roast beans to the measured beans.

Set grinder
Select the grind setting appropriate for your brew method: coarse for French press, medium-coarse for pour-over, medium for drip, and fine for espresso. For a 12-oz cup with a drip or pour-over, use a medium grind.

Grind beans
Place the measured whole beans into the grinder. Pulse or grind until you reach an even consistency for the chosen setting (about 10–20 seconds for most electric burr grinders). Aim for uniform particle size to ensure balanced extraction. Transfer the ground coffee to a clean container or directly into the filter/brewing device.

Heat water
Bring 12 oz (about 355 ml) of filtered water to 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let sit 30 seconds.

Dose ground coffee
Use 2 tablespoons (about 10–12 grams) of the freshly ground coffee for a 12-oz cup. Adjust ±1/2 tablespoon to suit strength preferences.

Brew (pour-over or drip)
Place a filter in your pour-over dripper or use your drip machine. Add the ground coffee. Slowly pour a small amount of hot water to wet the grounds and let bloom for 30–45 seconds. Continue pouring in slow, concentric circles until you reach 12 oz. Total brew time should be 2.5–4 minutes for pour-over. For drip machines, simply start the machine and let it complete the cycle.

French press alternative
If using a French press, use a coarser grind and a ratio of roughly 1:15 (ground coffee to water). Add grounds to the press, pour 12 oz hot water, stir gently, place the lid, and steep for 4 minutes, then press slowly.

Storage of leftover whole beans
Store any unused whole beans in an airtight container in a cool, dark place. Use within 2–3 weeks for best freshness. Avoid storing in the refrigerator or freezer if opening frequently.
