Dough Ingredients

Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Combine Dry Ingredients

In a large mixing bowl, whisk together the flour and salt until combined.

  3. 3

    Mix the Dough

Make a well in the center of the dry ingredients. Pour in the activated yeast mixture and olive oil. Stir with a wooden spoon until a shaggy dough forms.

  4. 4

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  5. 5

    First Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for 1-2 hours, or until doubled in size.

Focaccia Assembly

  1. 6

    Prepare the Baking Tray

Grease a baking sheet or pan with olive oil.

  2. 7

    Shape the Dough

Once the dough has risen, punch it down and transfer it to the greased baking tray. Gently stretch it to fit the tray.

  3. 8

    Create Dents

Use your fingers to make deep dimples all over the surface of the dough.

  4. 9

    Add Toppings

Sprinkle the fresh rosemary and coarse sea salt evenly over the dough. Drizzle with additional olive oil.

  5. 10

    Second Rise

Cover the tray with a damp cloth and let the dough rise again for about 20-30 minutes.

Baking

  1. 11

    Preheat the Oven

While the dough is rising, preheat your oven to 425°F (220°C).

  2. 12

    Bake the Focaccia

Once the second rise is complete, place the focaccia in the preheated oven and bake for 20-25 minutes, or until golden brown.

  3. 13

    Cool and Serve

Remove from the oven and let it cool in the pan for a few minutes. Transfer to a wire rack, slice, and serve warm.
